Frozen Strawberry Trifle

Ingredients

  • 8 oz frozen strawberries, thawed and finely chopped (about 1 cup)

  • 1 cup confectioners’ sugar, divided

  • 1¼ cups heavy cream

  • 12 ladyfingers (about half of a 7-oz package)

  • 1 pint strawberry or vanilla ice cream, softened

  • Fresh strawberries, halved (optional, for serving)

Directions

  1. In a medium bowl, combine chopped strawberries and ½ cup sugar. Let sit for 10 minutes until juices are released.

  2. In a large bowl, beat heavy cream with remaining ½ cup sugar using an electric mixer until stiff peaks form. Fold in chopped strawberries using a slotted spoon, reserving the juice.

  3. Line an 8½-by-4½-inch loaf pan with parchment paper, allowing some overhang.

  4. Spoon 1¼ cups of the whipped cream mixture into the bottom of the pan and smooth the top.

  5. Dip 6 ladyfingers in the reserved strawberry juice and layer on top. Spread the softened ice cream over the ladyfingers.

  6. Repeat with remaining 6 dipped ladyfingers, then top with the rest of the whipped cream mixture.

  7. Cover and freeze until firm, at least 4 hours or up to 2 weeks.

  8. Let stand at room temperature for 10 minutes before serving. Transfer to a serving platter and top with fresh strawberries, if desired.
