Lemon Yogurt Cake

Ingredients

    • 2 cups flour

    • 1 cup sugar

    • 1 tbsp baking powder

    • 3 eggs

    • ½ cup oil

    • 1 cup plain yogurt

    • Juice and zest of 1 lemon

    • 1 cup powdered sugar

    • 2–3 tbsp lemon juice

    Directions

    1. Preheat oven to 350°F (175°C).

    2. Sift flour, sugar, and baking powder into a bowl.

    3. In a blender, mix eggs, oil, yogurt, lemon juice, and zest.

    4. Combine with dry ingredients and stir until smooth.

    5. Pour into a greased and floured bundt pan.

    6. Bake 35–40 min or until a toothpick comes out clean.

    7. Mix powdered sugar with lemon juice for the topping.

    8. Once cake is cool, drizzle with the lemon glaze.
