Mini Chocolate and Yogurt Parfaits

Ingredients

  • 2 cups plain Greek yogurt

  • 2 oz goat cheese

  • 3 tbsp unsweetened cocoa powder

  • ¼ cup raspberry jam

  • ¼ cup honey

  • ¼ tsp salt

  • Fresh raspberries (for garnish)

Directions

  1. Blend the base: In a food processor, combine Greek yogurt, goat cheese, honey, and salt. Process for about 60–90 seconds until velvety smooth.

  2. Create the layers: Reserve 1 cup of the yogurt mixture and set aside. To the remaining mixture, add the cocoa powder and whisk until fully combined.

  1. Start by layering half of the chocolate mixture into small parfait or dessert glasses.

  2. Add a layer of the reserved plain yogurt mixture.

  3. Finish with the remaining chocolate yogurt.

  4. Chill: Cover and refrigerate for at least 3 hours to allow the flavors to set and meld together.

  5. Warm the raspberry jam in a small saucepan until just melted, then spoon it over each parfait.
