Orzo & Date Salad

Ingredients

  • 16 oz orzo

  • A handful of dates, chopped

  • ¼ cup pistachios

  • ¼ cup pine nuts

  • Shaved parmesan cheese (as much as you’d like!)

  • Juice of 1 lemon

  • 1 cup chopped scallions

  • Olive oil

  • Salt and pepper, to taste

Directions

  1. Cook the orzo according to package instructions—we like it just past al dente for a softer bite.

  2. Drain and let cool slightly, then transfer to a large mixing bowl.

  3. Add chopped datespistachiospine nutsscallions, and shaved parmesan.

  4. Dress the salad with fresh lemon juice, a generous drizzle of olive oil, and season with salt and pepper to taste.

  5. Toss well and serve at room temperature or slightly chilled.
