Spicy Watermelon Salad

Ingredients

  • 1 small watermelon (about 6 cups, diced)
  • 1 to 2 jalapeños, sliced and deseeded

  • 1/3 cup chopped fresh cilantro

  • 2 tbsp olive oil

  • 1 tsp salt

  • Tajín, to taste

Directions

  1. Chop all your ingredients ahead of time if needed, but wait to mix until just before serving.
  2. In a large bowl, combine the diced watermelon, jalapeños, cilantro, olive oil, and salt. Toss gently to mix.

  3. Sprinkle with Tajín to taste and serve immediately.
